The reason why you start with a lower hp car is also to learn how to carry your speed through corners. Too many times I’ve passed up on people who drive vettes, porsche’s, etc... because they rely too much on going fast in the straights. But know nothing about properly carrying their speed. Mind you i’m only in a 240 hp car. Also with a faster car there is so much more room for error it's not even close. Keep in mind faster cars eat up more resources,. Tires, brakes, gas... You definitely want those consumables to stay at the minimum so you can focus on just getting more seat time.

The best I've driven on track are a couple of BMW's and my current Renault Mégane RS 300 Trophy, worst I've experienced is the Audi S5 V8, its a lumbering oaf of a car, also Toyota MR-2, terrible vehicle unless you put some serious money into your suspension setup, inherently unbalanced vehicle.

I started learning with a 2002 Honda Civic EX, and then was moved to my Father's 1998 Volvo V70T5 FWD which I finished learning in. could floor the civic no prob with no issues. Flooring the V70 however, would lead to serious Torque steer (FWD) and if the road was wet I would absolutely spin. also would start wheel spin on one side if flooring it while turning, so was a great experience. It had great brakes but was a bit heavier than the civic (not as heavy as you think though) had to learn throttle discipline as well as other things. Was great practice for my now 300+ HP AWD which behaves much similar in general but has it's own quarks and is Heavier than the old wagon was. likely from being AWD., but has much beefier brakes.
